Joel (25): Recreating Heaven

THE IDEA:
On my weblog I will discuss a sublime blueberry-red wine-game fond-sauce that I once made and i am trying to recreate. Of course this sauce contains several ingredients which can be added at various times.
One can also vary the way in which one prepares the sauce (variation in reduction time etc.) In my first blog i will describe my efforts to recreate the sauce as i once made it. Later i can start experimenting like i described above. I could add the berries at the start while reducing the wine, or add them later in the reduction process. I could remove them out of my sauce, or keep them in. I could add a little knob of cold butter to thicken the suace or try to get the thickness by just reducing it or adding other sauce thickening ingredients. I could also discuss the ingredients themselves: what sort of wine or maybe port, where to find the best berries for this sauce, what fond to use (or make the fond myself, that by it self, could be enough to write a weblog on). I could discuss what meat goes best with this sauce or what side dish. The options are endless and this is really me.
